I love having meals that I can literally just throw in the oven, for those nights when getting in the kitchen feels dang near impossible. We’ve all had those days (maybe a little more often than we’d like to admit…), this make-ahead keto chicken parmesan is here for us all. When we’re having one of those days.
This recipe is super simple and can be whipped up in just a few minutes, but sometimes even just a few minutes can mean the difference between sticking to your diet and going out to get some greasy artery-clogging fast-food. In order to meal prep this recipe, simply follow steps 1-7. Then, put it in the fridge (up to five days). Once you’re ready to eat, complete steps 8 & 9 for a stress-free meal! (Cooking time may need to be adjusted depending upon the temperature of your fridge.)
Make-Ahead Keto Chicken Parmesan
The ingredients…
- 1.5 lb chicken breast, pounded to 1/4 inch thickness
- 1/2 c ground pork rinds
- 1 c marinara sauce
- 1 c grated parmesan
- 1 tbsp Italian seasoning
- 1 tbsp oil
The recipe…
- Preheat oven to 375 F.
- Pound chicken breast until 1/4 inch thick.
- Mix ground pork rind and Italian seasoning
- Spread ground pork rinds and seasoning onto a plate, then coat chicken breast in pork rinds.
- In a large pan heat oil on medium-high heat.
- Add chicken breasts and cook for about 3 minutes on both sides, until lightly browned.
- Transfer chicken breast into a large pyrex pan, or another heat-safe dish.
- Add equal amounts of marinara sauce on all breasts, then top with an equal amount of parmesan.
- Cook in the oven for about 20 minutes, or until cooked.
- Enjoy!
