Anything cinnamon sugar is always a huge hit at our house. This easy Swerve keto coffee cake is a HUGE, ginormous, big ole slam dunk at our house. Partly because it is so yummy, (it tastes pretty much like a regular, non-keto coffee cake), but also because it is just so dang easy to make!
That being said, this recipe is absolutely perfect for those of us who are just, #notabaker.

The ingredients…
The keto coffee cake batter:
- 1 box Swerve Vanilla Flavored Cake Mix
- 3 Eggs
- Vanilla
- Oil of choice
- Water
Cinnamon brown sugar crumble:
- 3 tbsp melted butter
- 3 tbsp swerve brown sugar, lightly packed
- 4 tbsp coconut flour
- 2 1/2 tsp cinnamon
Icing/glaze:
- 1/4 c swerve powdered sugar
- 1 tbsp milk
- 1/2 tsp vanilla
A note on specialty keto ingredients (AKA Swerve & coconut flour)…
You can get swerve from Amazon, or even your local grocery store (although your local grocery store might not carry the specialty brown/powdered sugars)!

How to fork it up…
Aside from forgetting to take your cake out of the oven (I can’t help you there, sorry!) the only way to fork up this cake is by not getting the topping consistency right. Luckily, this recipe is super forgiving, and you can easily correct that!
To start, just try to make sure you are measuring things correctly. If it still doesn’t look as you think it should, don’t sweat it!
For the brown sugar crumble: if the mixture looks too dry, add a tiny bit more melted butter OR keto syrup if you don’t feel like melting more butter. Alternatively, if it looks too wet, add a little bit more flour & sugar.
For the icing: if the mixture looks too dry, add THE SMALLEST amount of milk (a little goes a long way for this!). If the mixture looks too wet, add a bit more powdered sugar.
Chances are, if you measure everything well, then you will be cruising through this recipe!
The Easy Keto Coffee Cake Recipe…
- Preheat oven to 350 degrees F.
- Prepare cake mix according to box instructions.
- Add cake to greased baking pan (I use a 9-in round one).
- Start making the brown sugar crumble by melting 3 tbsp butter.
- Mix the rest of the brown sugar crumble ingredients in with the butter: 3 tbsp Swerve brown sugar (lightly packed), 4 tbsp coconut flour, 2 1/2 tsp cinnamon. The mixture should look nice and crumbly, if it doesn’t go read the section on “How to fork it up”!
- Add brown sugar crumble evenly to the top of the cake.
- Bake in the oven for about 25-30 minutes.
- While baking, get the icing ready by mixing 1/4 swerve powdered sugar, 1 tbsp milk, and 1/2 tsp vanilla. (The icing should look pretty thick if it doesn’t, go read the section on “How to fork it up”.)
- To get it out of the pan (optional)… Allow to cool, then use a knife or spatula to loosen the sides and bottom of the cake. Do this as best you can, to avoid a broken cake! To remove from pan- use two plates. Use the first plate to flip the cake over and get it out of the pan (it will be upside down at this point.) The other plate will be used to flip the cake right-side-up, and this will be its “final plating” spot.
- Top with icing. (Cake should be mostly cooled when you do this).
- Enjoy!
