I love being able to whip up frosting in a jiff. Especially for nights when I get those random cupcake cravings (check out my copycat swerve keto cake batter here). This keto cream cheese frosting is so easy to make and has less than 1-gram net carbs. I mean, why not?
This frosting is super tasty. It’s not too sweet, and honestly, I could (and do) eat it all by itself.
Life is short, so lets get right to it!
The Ingredients
- 8 oz cream cheese (room temperature)
- 1/2 c butter (room temperature)
- 1 c swerve confectioners sugar
- 2 tsp vanilla
- pinch of salt
Keto Cream Cheese Frosting Recipe…
- Using a hand mixer, mix cream cheese, butter, vanilla, and salt.
- Continue mixing and slowly add confectioners sugar.
- Beat another 5 minutes after everything is mixed.
- Refrigerate about 20 minutes before eating.
How to Fork It Up…
- Melting the butter and cream cheese. Obviously this won’t work. Don’t do it.
- Adding the frosting to warm cake. This will make your frosting melt. Let the cake cool first and all will be yum.
Something I don’t recommend, yet do all the time anyways… Sometimes I just want some dang frosting! To speed up the wait time of allowing the butter and cream cheese to soften, I use the defrost setting in my microwave. You just need to keep a really close eye and to make sure it doesn’t melt. But then again, I am not a good example and this is also a really good way to fork up your frosting.
