Preheat oven to 400 degrees Fahrenheit.
Soak pork rinds in cream, about 10 minutes. Set aside.
In a large bowl, beat egg.
Add all ingredients into the bowl, (including pork rinds) except for the mozzarella stick. Wait to add the mozzarella stick.
Gently fold all ingredients until combined.
Separate into four meatballs of similar size. Transfer to a heat-safe dish.
Cut the mozzarella stick into four equal pieces.
Poke a hole in the top of the meatball. Insert 1/4 of mozzarella stick in each meatball. Close top of meatball.
Add marinara on top of meatballs.
Cook in the oven for 25-30 minutes, or until thoroughly cooked (160 F). Enjoy!
