Keto Giant Stuffed Mozzarella Meatballs

Yummy, gluten-free, keto, giant cheese-stuffed meatballs

Ingredients

  • 1 lb ground beef
  • 1/4 c ground pork rinds
  • 1/2 c heavy cream
  • 1 egg large
  • 1/2 c ground parmesan
  • 1 mozzarella cheese stick
  • 1/2 tsp garlic salt
  • 1/4 tsp red pepper flakes
  • 2 tsp italian seasoning
  • 12 oz marinara sauce

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Soak pork rinds in cream, about 10 minutes. Set aside.
  • In a large bowl, beat egg.
  • Add all ingredients into the bowl, (including pork rinds) except for the mozzarella stick. Wait to add the mozzarella stick.
  • Gently fold all ingredients until combined.
  • Separate into four meatballs of similar size. Transfer to a heat-safe dish.
  • Cut the mozzarella stick into four equal pieces.
  • Poke a hole in the top of the meatball. Insert 1/4 of mozzarella stick in each meatball. Close top of meatball.
  • Add marinara on top of meatballs.
  • Cook in the oven for 25-30 minutes, or until thoroughly cooked (160 F). Enjoy!
