Giant Stuffed Mozzarella Meatballs – The Best, Easy AF, Keto Meatballs!

Over the years I have become somewhat of a meatball connoisseur. That being said, I can be very picky about my balls. These keto meatballs are no exception to the scrutiny. But you just cannot beat cheesy-goodness…

The hubby’s family is from Norway, and they always make some damn good meatballs…

These meatballs are a MUST have at all family gatherings. I’ll leave the Sweedish Norwegian meatball making to the professionals, maybe one day they’ll teach me… But what I do have is this bomb AF cheese stuffed keto meatballs recipe for you!

These keto meatballs have a lot of flavors. Plus this recipe is like most of my recipes: quick and easy.

I hope you love these keto meatballs as much as I do.

The ingredients…

This recipe makes four meatballs.

  • 1 lb ground beef
  • 1/4 c ground pork rinds (about 1 oz)
  • 1/2 c heavy cream
  • 1 egg
  • 1/2 c Parmesan
  • 1 mozzarella cheese stick
  • 1/2 tsp garlic salt
  • 1/4 tsp red pepper flakes
  • 2 tsp Italian seasoning
  • 12 oz Marinara

Keto meatball recipe…

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Soak pork rinds in cream, about 10 minutes. Set aside.
  3. In a large bowl, beat egg.
  4. Add all ingredients into the bowl with the egg, (including pork rinds) except for the mozzarella stick. Wait to add the mozzarella stick.
  5. Gently fold all ingredients until combined.
  6. Separate into four meatballs of similar size.
  7. Transfer to a heat-safe dish.
  8. Cut the mozzarella stick into four equal pieces.
  9. Poke a hole in the top of the meatball.
  10. Insert 1/4 of mozzarella stick in each meatball.
  11. Close top of meatball.
  12. Add marinara on top of meatballs.
  13. Cook in the oven for 25-30 minutes, or until thoroughly cooked (160 F).
  14. Enjoy!

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Soak pork rinds in cream, about 10 minutes. Set aside.
