The hubby’s family is from Norway, and they always make some damn good meatballs…
These meatballs are a MUST have at all family gatherings. I’ll leave the Sweedish Norwegian meatball making to the professionals, maybe one day they’ll teach me… But what I do have is this bomb AF cheese stuffed keto meatballs recipe for you!
These keto meatballs have a lot of flavors. Plus this recipe is like most of my recipes: quick and easy.

The ingredients…
This recipe makes four meatballs.
- 1 lb ground beef
- 1/4 c ground pork rinds (about 1 oz)
- 1/2 c heavy cream
- 1 egg
- 1/2 c Parmesan
- 1 mozzarella cheese stick
- 1/2 tsp garlic salt
- 1/4 tsp red pepper flakes
- 2 tsp Italian seasoning
- 12 oz Marinara
Keto meatball recipe…
- Preheat oven to 400 degrees Fahrenheit.
- Soak pork rinds in cream, about 10 minutes. Set aside.
- In a large bowl, beat egg.
- Add all ingredients into the bowl with the egg, (including pork rinds) except for the mozzarella stick. Wait to add the mozzarella stick.
- Gently fold all ingredients until combined.
- Separate into four meatballs of similar size.
- Transfer to a heat-safe dish.
- Cut the mozzarella stick into four equal pieces.
- Poke a hole in the top of the meatball.
- Insert 1/4 of mozzarella stick in each meatball.
- Close top of meatball.
- Add marinara on top of meatballs.
- Cook in the oven for 25-30 minutes, or until thoroughly cooked (160 F).
- Enjoy!
Keto Giant Stuffed Mozzarella Meatballs
Ingredients

Instructions
- Preheat oven to 400 degrees Fahrenheit.
