Keto Pigs in a Blanket – Easy, Gluten Free, Low Carb

Looking for a super tasty, low carb, keto pigs in a blanket recipe? Well, look no further!

I don’t know about you guys, but I think pigs in a blanket = super fun and nostalgic comfort food. Not to mention, I have yet to meet a kid that didn’t love pigs in a blanket, making it a great meal the whole family will eat. So whats the problem?

It isn’t keto, of course!

But seriously, even if you aren’t keto, this recipe is much healthier than the traditional, and still super tasty!

Life is short, so lets get right to it!

How to fork it up…

The main way to mess up this recipe is to melt the cheese too much. The cheese is used to make the fathead dough. We need it to be very stretchy, rather than completely melted. To avoid too much melt, just listen to my instructions: microwave in short 15 second increments, stirring the cheese in between every increment. Once it is all together and stretchy, it is ready.

The Ingredients…

  • 8 hot dogs
  • 2 c almond flour
  • 1 1/2 c mozzarella, shredded
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 c sharp cheddar cheese, shredded

The Recipe…

  1. Preheat oven to 425 degrees Fahrenheit, spray a baking sheet with baking spray.
  2. Microwave mozzarella in a large microwave-safe bowl. For 15 second intervals, until just melted and very stretchy. In between each microwave, stir cheese thoroughly.
  3. Add 1/2 the almond flour, 1/2 tsp salt, and 2 tsp baking soda to melted cheese. Knead the dough until everything is combined, you will need to use your hands to get it mixed with the cheese completely.
  4. Add the other 1/2 of almond flour and egg.
  5. Knead until combined.
  6. If the dough is still sticky, add a little more almond flour.
  7. Once the dough is dry, refrigerate about 15 minutes.
  8. Take the dough out of the fridge, and roll it using a cookie dough roller. Add more almond flour on top if it gets too sticky.
  9. Cut into triangle shapes.
  10. Cut a slit into the hot dog, lengthways, and stuff with cheddar cheese.
  11. Roll stuffed hot dog in triangle-shaped pastry.
  12. Do this until all 8 hot dogs are made, and on the baking sheet.
  13. Optional: top with Trader Joe’s “Everything But The Bagel Seasoning.”
  14. Bake at 425 for 10-15 minutes, or until browned.
  15. Enjoy!
