Easy Keto Coffee Cake

Ingredients

Cake Mix

  • 1 box Swerve Vanilla Flavored Cake Mix
  • 3 eggs
  • 1 tbsp vanilla
  • 1/3 c water

Cinnamon Brown Sugar Crumble

  • 3 tbsp butter melted
  • 3 tbsp swerve brown sugar lightly packed
  • 4 tbsp coconut flour
  • 2 1/2 tsp cinnamon

Icing

  • 1/4 c swerve powdered sugar
  • 1 tbsp milk of choice
  • 1/2 tsp vanilla

Instructions

  • Preheat oven to 350 degrees F.
  • Prepare cake mix according to box instructions.
  • Add cake to greased baking pan (I use a 9-in round one).
  • Start making the brown sugar crumble by melting 3 tbsp butter.
  • Mix the rest of the brown sugar crumble ingredients in with the butter: 3 tbsp Swerve brown sugar (lightly packed), 4 tbsp coconut flour, 2 1/2 tsp cinnamon. The mixture should look nice and crumbly!
  • Add brown sugar crumble evenly to the top of the cake.
  • Bake in the oven for about 25-30 minutes.
  • While baking, get the icing ready by mixing 1/4 swerve powdered sugar, 1 tbsp milk, and 1/2 tsp vanilla. (Add more powdered sugar if the mixture is too thin and does not resemble icing.)
  • To get the cake out of the pan (optional)... Allow to cool, then use a knife or spatula to loosen the sides and bottom of the cake. Do this as best you can, to avoid a broken cake! To remove from pan- use two plates. Use the first plate to flip the cake over and get it out of the pan (it will be upside down at this point.) The other plate will be used to flip the cake right-side-up, and this will be its "final plating" spot.
  • Top with icing. (Cake should be mostly cooled when you do this).
